Local Niigata Ume & rock sugar are steeped for 4 months in Junmai Ginjo sake followed by a further 4 months storage before release.
Beautifully balanced palate of Tougorou ume with crisp acid, almond, peach & apple brandy. Very fine tannic dry finish with mild astringency. Aroma of almond meal, marzipan and amaretto biscuits.
Limited production umeshu from immensely talented brewer Kirinzan.
