This year's Aya has a light aroma of peaches and pear. A balanced session sake that is way too easy to drink. Palate of peaches, chocolate, mild licorice, with fine grained acidity and a clean finish. Discover a higher intensity of chocolate in an ochoko cup.
This is a very special sake from living in Japan 15 years ago. Made with a very rare sakura yeast received from Professor Nakata (Tokyo University of Agriculture) under the strict condition that this sake would be brewed and priced for the local people. With most of this sake consumed within a short drive of the brewery it is a great honour to be able to sell this long time favourite of the Gifu region. A delicious everyday drink at an affordable price.
