Wakatakeya Debut 720ml
Another historic style sake from Wakatakeya. Take a journey back in time and enjoy a style of sake that our grandfathers or great grandfathers might have enjoyed.
This sake is brewed using techniques from the turn of the 19th century. Yeast isolated back in 1895 at Tokyo Teigoku Daigoku (actually the first sake yeast ever isolated) is matched with koji "Aspergillus Oryzae Ahlburg" (discovered in 1876) to create a revivalist sake that can be enjoyed today. After brewing, the sake is held back in bottle for one year before public release.
Sip and savour this very rare sake and see it develop in the glass as it warms from lightly chilled to room temperature. Like back in the days of old it’s all about the palate. A traditional earthy sake with hints of starfruit, sour plum, citrus, spice, unripe apricot, and cut grass, this sake will satisfy even the nerdiest of sake nerds.
This sake will taste different from Day 1 to Day 4 once the bottle is open. Both incarnations are very enjoyable.
