Hanahato Hana Colombe Sawayaka Kijoshu 500ml
This sake is all about the palate. Drink well chilled in a small wine glass and enjoy flavours of apple, pear, cherry, mandarin, stewed apricot and agave syrup with a clean refreshing finish that is more abrupt than you would imagine. This sake is so easy to drink all by itself to end a great meal or to get the juices flowing before dinner.
Kijoshu is the Ice Wine of the sake world. The flavour is concentrated by adding already brewed sake to the ferment tank to replace about 50% of the water.
Most Kijoshu is aged in either tank or bottle for some time before release but Hana Colombe is an early release style that is refreshing and light (at least light for kijoshu). It is brewed using white koji to create a higher percentage of refreshing citric acid to create a ‘drink now’ style.
