Nagaragawa Kimoto Junmai Ginjo 720ml
When you read Kimoto on a label you have expectations of a rich, earthy, spicy umami bomb and this sake will not disappoint. While most Kimoto is Junmai grade Kanetake-san has gone a step further to produce a Junmai Ginjo. The nose is a little subtle in the apricot, butter, mushroom spectrum and gives a hint on what to look forward to in the glass. One sip will confirm fruit characters of juicy pear and apricot with an umami rich savoury, spicy, earthy palate with a hint of buttermilk and brown sugar.
This is one of those sake to enjoy over a broad range of temperatures. Start at about 10C and let it warm a little in the glass so you can enjoy an expanding range of characters. Heating to 40C will accentuate the umami and spice and uncover hidden citrus notes.
