Hanahato Kijoshu Oak 2012 300ml
An extreme style of sake 35 years in the making. Kijoshu is a style of sake where 50% of the water in the brewing process is replaced with Sake. In this case the water was replaced with a Kijoshu that has been aged for 28 years. After brewing the sake was placed in old oak barrels and aged since 2012 until bottling.
And the results are outstanding. Aromas of orange, oak, pickle, spice and broth. Complex palate of coffee, bitter chocolate, burnt toffee, fig, apricot, tobacco, toasted almond, orange, cream, with very fine tannins and rich umami.
With only 1394 bottles produced the brewery is now sold out. We received a limited allocation of this kijoshu so buy it while you can.
