A sake showing incredible balance of sweetness and acidity made in the kijoushu method combined with a secret proprietary lactic starter method. Kijoushu is sake that uses the addition of already brewed sake replacing about 50% of the water during brewing, in this case a 9 year old koshu was used for extra complexity.

The nose is restrained yet distinctively honey, sweet apple, pear and rice pudding. Tiny bubbles trapped from fermentation are the first thing you notice on the palate along with honey, toffee apple, apricot jam, Seville orange and yuzu and an incredibly juicy texture. Although this sake is considered sweet, it is perfectly balanced with acidity and never appears cloying or overpowering.

This sake also leads itself to be warmed to about 25-30C. At this temperature the sweetness, acid and flavour intensity are less dominating and the Alpha 5 becomes like a soothing winter tonic. For best results warm in a tin sake tanpo to experience a silkier, more mellow drinking experience. 

PS. the black dots on the label are stickers that you can attach to a tokkuri. They turn pink when the sake is warm.

This sake has been pasteurised one time (not 2 times) and should be stored refrigerated to prevent spoilage.
