Wakatakeya brewery was established in 1699 during the Genroku period (1688 to 1704). In recent years 13th generation President Denbee Hayashida decided to recreate a ‘historic’ sake from this period, hence the name "Genrokushu". (Current president is 14th generation).

The palate is a complex symphony of coffee, dark chocolate, burnt honey, toasted nuts, marzipan, dried plum, peat, kombu and savoury caramel yet retains easy sipping status for at least two glasses. The balance of sweetness, acidity and umami makes it surprisingly easy to drink.

Milled to just 85% of the rice grain remaining, the Master Brewer uses 1.5 times more Koji than for regular sake. The final sake is a blend of brewing years that are 5 or more years old.

This is a sake not just for the sake Otaku or for lovers or fortified wine. If you are interested in delving into the complexities of Koshu inspired from the Genroku period, this is definately one not to miss.
