Wakatakeya Koshu Genrokushu 720ml
Wakatakeya brewery was established during the Genroku period (1688 to 1704) and in recent years a sake recipe was found from the very early days of the brewery which was used to recreate a ‘historic’ style sake from the Genroku period, hence the name "Genrokushu".
The palate is a complex symphony of coffee, dark chocolate, burnt honey, toasted nuts, marzipan, dried plum, peat, kombu and savoury caramel yet retains easy sipping status for at least two glasses. The balance of sweetness, acidity and umami makes it surprisingly easy to drink.
Milled to just 85%, the Toji uses twice the amount of Koji. The final sake is a blend of brewing years and further aged for five years before release.
This is a sake not just for the sake Otaku or for lovers or fortified wine, if you are interested in delving into the complexities of Koshu from a traditional period, this is definately not one not to miss.
