Dewatsuru AWA - Sparkling Sake Ashitae 720ml

In 2016 a group of brewers created the AWA Sake Association for the betterment of sparkling sake. Their goal was to create celebration worthy sake in time to toast the Tokyo Olympics. To carry the AWA label, sake must follow certain criteria. The sake must be clear and be Junmai (pure rice) with no added alcohol. The CO2 must come from secondary bottle fermentation and have pressure of at least 3.5 bar but can be higher. The ABV must be over 10% and when poured create a stream of bubbles.

As a founding member of the AWA Sake Association, Dewatsuru have created Ashitae Sparkling sake.

Upon unwrapping the foil, you are greeted with a proper cork that makes a celebratory pop on removal.

This is superb, elegant, refined sake with persistent bubbles that fizz with all the fervor of your favourite premium sparkling wine. The palate is clean and refreshing with notes of crisp apple, lemon and minerals with a short clean finish.
