Crafted using the brewing techniques of Bodaisen Shoryakuji Temple and produced during the summer months using a rare zero-stage mash method, this exceptional sake revives a style that has largely disappeared from modern production. The recipe originates from Goshu no Nikki, an early Muromachi-period technical text on sake brewing, offering a fascinating insight into Japan's medieval brewing traditions. To ensure historical authenticity, fermentation takes place in traditional earthenware vessels, faithfully recreating the conditions of the original method.
