Mizuhana 1568 Akitsuho

A rare and fleeting opportunity to go back in time and experience sake from the days of Nobunaga.

Brewed according to a recipe recorded in the Tamonin Nikki (1568), a diary written by a monk at Kofukuji Temple, this remarkable sake offers a rare glimpse into Japan's brewing history. Crafted during the winter months using a traditional three-stage fermentation process—the foundation of modern sake production—it is brewed in historically accurate earthenware vessels to preserve authenticity and faithfully recreate the methods of the era.

This is a truly captivating sake that invites adventurous drinkers on a journey through time. The aromatic profile is both intriguing and complex, with notes reminiscent of mead, hops, koji, and ripe apricot. Rich and layered, yet surprisingly vibrant, it immediately sets itself apart from conventional aged sake.

Its striking golden-amber hue hints at maturity, while the palate delivers an unexpected elegance and balance. Complex layers unfold with every sip: delicate earthy honey, orange peel, apricot, cinnamon spice, gentle acidity, and a deeply satisfying umami character. The texture is luxurious and almost silky, carrying remarkable depth without heaviness.

Despite its complexity, the finish remains clean, refined, and gently lingering, making it astonishingly drinkable. This is an aged sake of exceptional balance and craftsmanship—one that encourages another glass, and perhaps even another bottle. It's easy to imagine that, centuries ago, this would have been considered a truly refined and prestigious sake.
