To place the Dewa 33 sticker on a bottle of sake it must pass a number of criteria. 1) Made from Dewasansan rice milled to at least 55% 2) Must be Junmai Ginjo 3) Must pass a strict tasting test by a panel of judges and reach a minumim level of Bloody Delicious. The Toko Dewasasan Junmai Ginjo passes all criteria and then some.
An elegant sake made from Dewasansan rice with melon, cotton candy, hints of orange rind, blossom and lemongrass. Uncomplicated, refined sake that is a lesson in purity.
